It’s been a long week. But that’s actually a good thing for once.
I had a lot to do before my “winter break.” I never know how many vacation days I’m going to need for figure skating competitions so I end up with some left over at the end of the year. Our vacation and sick days don’t roll over nor do they get paid out. It’s a use them or lose them scenario.
I realized I had four days left and with Christmas being in the middle of the week, it worked out perfectly that I’d be able to take the week of Christmas off.
That mean the week before Christmas, I had a lot of projects to tie up before the end of the year so I spent a good chunk of the week working out of the Grand Rapids office because most of what I needed to do was sitting in front of a computer and working with colleagues up there to finish things up.
Wednesday night was also the kids last synchronized skating practice for the year. They will pick it back up in January with a couple of competitions left but they give families some time away from the rink for the holidays.
Practices have been at Wings Event Center recently so when I got off work, I headed down US-131 and made my way over to Wings Event Center. B gets done about 50 minutes before L so I usually try to pick him so he doesn’t have to sit there and wait for her to finish.
It’s a little out of my way but I saw a new gas station chicken place opened with some of my favorite gas station chicken so I kept going past Wings Event Center on I-94 towards Galesburg.
Krispy Krunchy Chicken just opened up about two weeks ago inside the BP Station on the corner of Michigan Avenue and 35th Street just outside of the Galesburg city limits in Comstock Township. I have never been in this gas station before even though I drive by it all the time. I usually go to the Johnny’s on 35th Street closer to I-94 when I need something but this could become my go-to for a Pepsi if I can just grab some chicken too.
There really isn’t a lot of room to squeeze the chicken operation into the existing gas station. They just kind of put the big warming cabinet on top of the checkout counter right next to the door.
I went and grabbed a couple of drinks they headed to the counter to pay. You order chicken right at the cash register.
The chicken is sitting in warming pans so it’s all ready to go when you order. The cashier grabbed a couple of boxes and started loading them up as I was running my credit card though the reader. I got the six piece tender box which comes with a side and a biscuit plus two bottles of Pepsi for right around $18.
I headed back to Wings Event Center to eat while I was watching B’s practice. J had a meeting also at Wings Event Center so I wanted to talk to her for a few minutes before she went in to the conference room for that.
I popped open the box of potato wedges first because I knew J and L might help me eat some of them. The wedges are huge and that left a few of them really undercooked. The ones that were cooked properly though are delicious. They have that crispy exterior with a cajun seasoning on them. I didn’t ask for any sauce or anything so I just ate them as is. They’re really good wedges. There were three or four that were pretty undercooked but there was so many in the box that it didn’t really matter. I just pushed those aside and ate what was left. I didn’t finish the box anyway even with some help from J.
I got six chicken tenders thinking someone would help me eat those as well but no one asked for one. I had them all to myself and six is way too many for one person. The tenders are big, juicy pieces of chicken breast with a crispy breading that has a hard time sticking because the chicken is so moist. There is a little bit of a cajun kick to the tenders but it’s not super spicy. As far as gas station chicken goes, this is some of the best. It always puts a smile on my face when I see a Krispy Krunchy Chicken sign when I’m pulling in for gas.
The last thing in the box was two biscuits. These are flaky buttermilk biscuits with a honey butter glaze. I was pretty stuffed by the time I found the biscuits in the bottom of the box but I powered through. They’re a little sticky from the honey but this way you don’t have to try to pour the honey out of a package on to the biscuits. And who doesn’t like honey on fast food chicken biscuits.
When I walked in to the rink with chicken, one of the girls my son skates with said it smelled like someone got Lee’s. I actually think Krispy Krunchy chicken is better than Lee’s. The chicken tenders are huge and juicy and there’s a ton of flavor in them without having to dip then in to anything. This the fourth Krispy Krunchy chicken in the area and I’m fine if they keeping popping up all over the area.
